Mark's Favourite Shrimp in Garlic Butter Sauce Recipe

(Taught to me by a chef from the Ottawa Westin Hotel during the 2006 Ottawa Food & Wine Show)

Ingredients

2 tbsp. olive oil
4   garlic cloves, minced.
1
  tbsp onion, minced.
12-16
uncooked shrimp (31-40/lb size), fresh or thawed.
1   tsp. dry oregano leaves, ground.
1

oz. Geek ouzo. (Sambuca also makes a nice variation.)
1/2 lemon
1/8

cup butter

Directions
  1. Place olive oil in a medium size frying pan on medium heat.
  2. Saute onions and garlic until onion starts softening.
  3. Add shrimp to the frying pan.
  4. Sprinkle 1/2 of the oregano leaves over the shrimp.
  5. Salt and pepper to taste.
  6. Cook on each side just enough to turn meat white (about 1-2 minutes per side)
  7. Flip shrimp over and add remaining oregano leaves. 
  8. Turn off heat and add ouzo. 
  9. CAUTION: Make sure to remove any flammables near the stove before proceeding!
    Light ouzo with a match to burn off the alcohol.
  10. After the flame extinguishes, squeeze the lemon over the shrimp.
  11. Add butter and stir well to let the residual heat melt the butter and create the sauce.
  12. Serve shrimp and sauce over a bed of white rice.
