Mark's Favourite BBQ Shrimp Recipe

(A modified version of a recipe originally swiped from Martha S.)


Ingredients

1/2   cup loosely packed cilantro leaves, chopped
1/2
  cup extra virgin olive oil

lbs large shrimp (about 40), peeled & deveined and patted dry.

  lemons

cloves of galic, crushed.
1/4   tsp. ground pepper
1

tsp. coarse salt
1/2

tsp. ascobic acid
1/4

tsp. cumin or ginger

Directions
  1. Place all ingredients (except oil and shrimp) in a food processor and buzz.
  2. Pour oil into food processor while running. Mix until smooth.
  3. Place 20 shrimp into two zip-lock bags.
  4. Pour half the mixture into each bag. Seal the bag and massage it to fully coat shrimp with the mixture.
  5. Place in fridge for 1-2 hours.
  6. Soak wooden food skewers in water while shrimp marinates.
  7. Cut each lemon into 8 wedges.
  8. Thread 4-5 shrimp, alternately with lemon wedges on skewers.
  9. Arrange skewars, off direct heat on a medium hot grill.
  10. Rotate skewars often, brushing with olive oil to avoid sticking.
  11. Cook until lemons are soft and slightly charred. About 6 min.
