Coriander and Dill Chicken Recipe

Ingredients

small onion, minceded.

green onions, minced

cloves of garlic, minced.
1

cup finely chopped fresh cilantro.
1/2

cup finely chopped fresh dill.
1/4

cup lemon juice.
3

tablespoon extra-virgin olive oil.
3/4

teaspoon salt.
1/2

teaspoon black pepper.
1/2

teaspoon ground cumin.
1/4

teaspoon cayenne pepper.
3

pounds chicken pieces or 1 chicken cut into pieces.

Directions

  1. In a baking dish large enough to hold all the chicken, mix together onions, garlic, coriander, dill, lemon juice, oil, salt, pepper, cumin and cayenne pepper.
  2. Add chicken, turning to coat in mixture and arranging the pieces skin side up.
  3. Roast in a 350° oven, basting often with juices after 30 minutes until golden brown and no longer pink inside and juices run clear when chicken is pierced. (About 1¼ hours.)
     Makes 4 servings.
